Ingredients:

Turkey sausage (36 mini discs):

2 lb ground turkey

2 tsp salt

2 tsp garlic powder

2 tsp paprika

1 tsp black pepper

2 tbsp lite syrup

1 tsp olive oil

Sweet potatoes:

4 sweet potatoes, peeled and chopped (~600g without skin)

1/2 tbsp olive oil

2 tsp salt

2 tsp paprika

1 tsp garlic powder

Eggs:

736g egg beaters

1/2 tsp salt

1/2 tsp black pepper

Instructions:

  1. In a bowl, add ground turkey with syrup and spices. Mix well.
  2. Wet your hands and form the seasoned turkey into mini disks. For 6 bowls, you should have 36 mini disks.
  3. Set the turkey discs aside as you prep your sweet potatoes.
  4. Peel your sweet potatoes and cut them into cubes.
  5. In a bowl, season the sweet potatoes with olive oil and spices.
  6. Bake the sweet potatoes in the oven for 30 minutes at 400 degrees Fahrenheit.
  7. Note: monitor closely, don’t overcrowd tray, do multiple trays if necessary.
  8. While the sweet potatoes are cooking, we'll cook the turkey discs and eggs.
  9. On a medium heat pan, add some olive oil. Add the discs onto the pan and cook for a few minutes on each side until brown.
  10. Remove the discs and add egg beaters (or egg whites) with salt and black pepper.
  11. Wait for the eggs to solidify and scramble.
  12. Remove the sweet potatoes from the oven.
  13. Serve and enjoy now.
  14. Or evenly portion everything between 6 bowls and refrigerate for the week.
  15. When you reheat, you can enjoy with ketchup or chipotle sour cream.
