Crispy Air Fried Fish & Chips

Ingredients:

Fish ⬇️

1.5lb cod (lightly salted)

Dry mixture:

1 tsp paprika
1 tsp garlic powder
1 tsp salt

1/2 cup flour

Wet mixture:

1 beaten egg

Final coating:

3/4 cup panko breadcrumbs or crushed corn flakes

Fries ⬇️

2 large russet potatoes (~400g without skin)

1 tsp olive oil

1 tsp salt

1/2 tsp garlic powder

1 tbsp corn starch

Instructions:

  1. Start off by prepping all of the ingredients.
  2. Peel and cut russet potatoes into thin spears.
  3. Throw into an ice bath for 30 minutes (this will remove excess starch and allow for more even cooking/texture.)
  4. While the potatoes are in the ice bath, prep the fish.
  5. Take several pieces of cod and gently pat dry and salt. Set them aside.
  6. In one bowl, take 1 egg and mix it thoroughly.
  7. In a separate bowl, mix flour, paprika, garlic powder and salt.
  8. And in a third bowl, lay some panko breadcrumbs.
  9. Take the cod and lay in the flour mixture, gently press down and make sure it is well coated.
  10. Flip to the other side and make sure that is fully coated as well. Gently pat to make sure flour sticks.
  11. Now dip the cod into the egg mixture on both sides and shake off any excess.
  12. Finally, coat each side with the breadcrumbs, gently patting them to make sure the coating sticks.
  13. Now take the potatoes out of the ice bath and gently dry.
  14. Coat them in olive oil, salt, garlic powder, and corn starch. Make sure each piece is coated.
  15. Now we air fry both the fries and cod. You can do them separately or together.
  16. Air fryer instructions for cod: 390 degrees for 12-14 minutes (watch closely and flip halfway through if need be)
  17. Air fryer instructions for fries: 375-390 degrees for 16-20 minutes.
  18. Plate and enjoy!
